Nemo’s Red-White-Blueberry 4th of July Pancake Recipe

Tastes good for any meal. Looks good, today and every day. Serves three to four. Delicious and nutritious.

2 EGGS — beat, whip, blend, or stir them until frothy or swirly, in a medium bowl or measuring cup with a pour spout

1 CUP MILK (any type, including soy milk or goat milk) — beat, whip, blend, or stir it into the eggs

1/4 TEASPOON SALT
1/2 TEASPOON BAKING SODA
1 TEASPOON BAKING POWDER
1/2 CUP WHOLE WHEAT FLOUR (any type)
1 CUP UNBLEACHED OR WHITE FLOUR (any type)

Slowly stir the dry ingredients into the eggs-milk blend, until you have a smooth batter.

Warm a medium-large frying pan on medium heat, then melt 1 TABLESPOON BUTTER or COOKING OIL (any type that’s handy) for a minute or two.

Pour your batter into the frying pan, making roughly 3 inch pancakes. This recipe allows for 12 pancakes.

Cook pancakes a minute or two per side, until light or medium golden brown. Not too soft and not too dark.

Serve pancakes covered with seasonal or frozen fruit salad, or jam: strawberry, raspberry, banana, pineapple, blueberry, blackberry.

Yogurt and sour cream are yummy additions. So is ice cream, when pancakes are for dessert.

If you don’t have specific ingredients on hand, use what’s in your kitchen, and improvise. I last made pancakes around 1972, and the ones I made today using the recipe above (with soy milk) were worth the wait!
